Caramel has something universal about it. Its aroma alone is enough to awaken a shared memory: sugar slowly turning golden, that precise point between sweet and toasted, the slightly bitter note that makes it so addictive. It is one of the most recognisable flavours in pastry and, for that very reason, one of the most demanding to work with nuance.

This Caramel Entremet explores that territory through four complementary preparations: a caramel mousse, a Dulcey chocolate crémeux, a Dulcey glaze and a toasted hazelnut tartlet as the base. And as a final touch, an element that completely changes the mouthfeel: our Salted Caramel Wet-Proof Crispies.

An entremet built in golden tones

The logic of this dessert is that of a very precise chromatic and aromatic palette: everything revolves around golden, toasted and caramelised tones. Caramel brings the depth; Valrhona’s Dulcey chocolate, with its notes of biscuit, browned butter and caramelised milk, extends that narrative with a rounder creaminess; and toasted hazelnut anchors the whole in a warm, nutty register.

There are no abrupt contrasts and no flavours competing with one another. Instead, there is a progression of intensities within a single aromatic family, where the difference is made by texture.

Caramel mousse with Instangel

The mousse is the preparation that brings lightness and volume to the entremet. To give it structure we used Instangel, our instant gelatine that dissolves directly cold, with no prior hydration and no need to heat the mix to activate it.

This has a direct advantage in a caramel mousse: the gelling agent can be incorporated without putting the base through temperature changes that would alter its aromatic profile or its texture. The process is simplified, production time is saved and the result is an airy, stable mousse with a clean cut, which holds its structure within the assembly without losing the melting sensation expected of it.

Dulcey chocolate crémeux

Inside, the Dulcey crémeux provides the most unctuous, enveloping layer of the whole. Valrhona’s blond chocolate, with its biscuit and caramelised milk notes, naturally dialogues with the caramel mousse, but with a denser texture and a more persistent finish on the palate. It is the preparation that extends the flavour and gives depth to each bite.

Dulcey glaze with Proglaçage

The exterior finish is a Dulcey glaze made with Proglaçage, our plant-based gelling agent designed specifically for glazes.

Proglaçage delivers a glaze with a lasting shine and a fine texture that neither cracks nor loses flexibility when cold, staying impeccable from display case to slicing. Its fineness also means the glaze does not act as an inert layer: it integrates into the bite and adds its own touch of Dulcey to the tasting experience. The result is that luminous golden tone which visually anticipates everything inside.

Toasted hazelnut tartlet with Maltosec

The entire entremet rests on a tartlet made with toasted hazelnut flour, which brings an intense nut flavour and a sandy texture that contrasts with the smoothness of the upper layers.

To build its texture, we incorporated Maltosec, our low-hygroscopicity maltodextrin. Its role is key in a base that will sit beneath a mousse and a cremeux: it adds body to the dough and, above all, reduces moisture absorption, helping the tart shell keep its crisp texture for longer instead of softening on contact with the moist preparations.

Salted Caramel Wet-Proof Crispies: the touch that changes everything

The final detail is also the most surprising. Our Salted Caramel Wet-Proof Crispies bring a hint of salt that lifts the whole and an unexpected crunch amid so much creaminess.

Their distinctive feature is technical: thanks to their protective coating, they stay crunchy even in contact with moist preparations such as mousses or cremeux. Where a conventional crunchy element would soften within a few hours, these crispies are still crunchy at the moment of service. And that saline touch, so characteristic of salted caramel, cuts through the sweetness just when the palate needs it.

Caramel in every form

The Caramel Entremet shows that a single aromatic register can carry an entire dessert without becoming monotonous, as long as the textures are well thought out: the airiness of the mousse, the unctuousness of the cremeux, the shine of the glaze, the sandiness of the tart shell and the crunch of the crispies. Five different sensations in service of one flavour.
