6g of Instangel corresponds to 1 sheet of gelatin. Apply cold. Acts in about 20 min. Can be applied to any type of processing with some degree of water content.
With a Bloom of 60+/-10, this gelatin offers perfect firmness and texture. The gelling speed is very fast, acting in approximately 20 minutes. It is suitable for freezing, maintaining its consistency even at low temperatures, with a gelling temperature below 15ºC. The result is a soft and flexible gel, perfect for a wide range of culinary applications.
