Some desserts tell their story before you even taste them. Cacao Bean is exactly that: a mimetic reproduction of a cocoa bean—the primordial form of chocolate, the origin point of everything—that, when opened, reveals four chocolate preparations in dialogue. A completely vegan dessert, technically precise, that transforms the act of biting into a narrative about cocoa itself.
The choice of shape is not decorative. Presenting a chocolate dessert with the exact silhouette of a cocoa bean establishes an immediate connection between the finished product and its raw material. It is a conceptual resource that works especially well in restaurant service or pastry display cases: the diner understands the dessert before it is explained to them.
And inside, the journey is pure chocolate in four distinct textures.
Vegan chocolate sponge cake. The structural base, airy and with a tender crumb, provides the solid component of the ensemble. Its organoleptic function is twofold: it supports the bite and provides that spongy texture that contrasts with the creaminess of the rest.
Chocolate crèmeux. The layer of medium unctuousness, dense and enveloping, that coats the palate and prolongs the presence of chocolate in the mouth. This preparation adds depth and aromatic persistence.
Intense vegan chocolate mousse. The airy, light, and melting layer that balances the density of the crèmeux. Its function is to lighten the ensemble without reducing its intensity: it provides volume in the mouth with a sensation of lightness that prevents the dessert from feeling heavy.
Guanaja 70% dark glaze. The finish and the first sensory impression. That deep, shiny black anticipates the intensity of the interior, and in the mouth, it provides the most bitter and powerful note of the entire ensemble.
The organoleptic journey is deliberate: it begins with the most intense and brilliant aspect of the glaze, moves through the airy lightness of the mousse, reaches the unctuousness of the crèmeux, and concludes with the structure of the sponge cake. Four intensities and four textures of the same ingredient.
Mousse is probably the most challenging preparation to veganize in chocolate pastry. It must be airy yet stable, light yet full-bodied, and must hold its structure without collapsing.
Vegan Mousse Gelatine is specifically formulated for this application. It creates mousses with a fine and stable texture, with an air retention capacity that allows for that characteristic melting lightness of a classic mousse, but entirely from plant-based ingredients.
The result in Cacao Bean is an intense chocolate mousse that melts progressively in the mouth, releasing the aroma of cocoa without the gelatinous or gummy sensation that sometimes betrays poorly formulated vegan versions.
The dark glaze made with Valrhona’s Guanaja 70% and Proglaçage, our plant-based gelling agent specifically designed for glazes, is what gives Cacao Bean its definitive finish.
Proglaçage provides a persistent mirror-like shine, a fine texture that does not crack or lose flexibility when cold, and stability that maintains an impeccable finish from glazing to serving. And being plant-based, it maintains the overall coherence of the dessert.
A significant detail: the glaze is also flavor. Its fineness allows it to integrate into the bite instead of acting as an inert layer, adding the intensity of Guanaja to the aromatic journey.
Chocolate holds a central place on the Christmas table, and Cacao Bean fits naturally into that context. Its individual format makes it ideal for dessert tables, celebratory menus, or display case sales during the holiday season.
But its greatest strategic value is another: it is a 100% vegan dessert that is not presented as an alternative. There is no visible concession or compromise. In family gatherings and corporate meals, where increasingly diverse dietary profiles coexist, being able to offer a dessert that everyone can share—without anyone feeling they are eating a reduced version of something—has a value that goes beyond the technical.
Some recipes are born from a special occasion and end up being much more than that. The Alballana Brioche is one of them. Created by Lorena Criollo, pastry chef and trainer at Valrhona, this brioche was conceived as a celebration of Easter 2026: a seasonal viennoiserie piece where technique and flavour merge in every […]

This Matcha and Cherry Cake represents one of the most interesting technical challenges in baking: getting a gelatinous fruit insert to maintain its texture during baking, without liquefying or migrating within the dough. The solution lies in Gellan Gum, a thermo-reversible gelling agent that allows the cherry and raspberry jelly to remain stable even at […]
