Plated dessert is probably the most demanding discipline in restaurant pastry. Unlike a display-case preparation, which must hold for hours, a plated dessert is built to be eaten at the exact moment it reaches the table. This makes it possible to work with contrasting temperatures, fleeting textures and preparations that would not survive in a display. But it also requires absolute technical precision: each component must be ready, stable and at its optimal point precisely when the pass calls for it.

This pineapple, lemon and lemon verbena plated dessert meets that demand with four preparations that interact with one another: a pineapple gel, a lemon sorbet, a pain de Gênes and roasted pineapple with spices. A fresh, aromatic and light ensemble that nonetheless finds in the spices its direct connection to the Christmas imagination.

Pineapple gel with Gelcrem Frío: texture without cooking

The pineapple gel is made with Gelcrem Frío, our functional native starch that develops its thickening capacity directly when cold, without the need to apply heat.

This characteristic is especially relevant when working with pineapple. This fruit contains bromelain, a proteolytic enzyme that interferes with the gelation of protein-based gelling agents such as gelatin, and whose heat treatment (necessary to deactivate it) alters the fresh, enzymatic aromatic profile that makes pineapple taste like pineapple. By working cold with Gelcrem Frío, we keep that tropical freshness intact—that juicy, slightly acidic character that is lost as soon as the fruit is exposed to heat.

The result is a gel with a silky, glossy texture and an absolutely clean flavour, adding a layer of fruit intensity to the plate with no technical interference. In service, moreover, the absence of a thermal process greatly simplifies production: it is made, chilled and ready.

Lemon sorbet with Profiber Stab 5: the frozen counterpoint

The lemon sorbet is the element that brings thermal contrast and acidity to the whole. Formulated with Profiber Stab 5, our high-performance stabilizing fibre, this sorbet solves one of the greatest challenges of citrus sorbets: maintaining a creamy, stable texture in a base with high acidity and high water content.

Profiber Stab 5 works on several fronts simultaneously. It controls crystallization, preventing the formation of perceptible ice crystals that would ruin the texture. It improves air incorporation during churning, creating a sorbet with body but without excessive density. And, crucially in a restaurant context, it ensures stability during service: the sorbet withstands the transition from the cold room to the table without collapsing or losing its shape on the plate.

In a plated dessert, where the sorbet quenelle is often the central element of the presentation, that stability is not a minor technical detail: it is the difference between an impeccable plate and one that arrives melted.

Technique in the service of the pass

What defines a good plated dessert is not only its flavour: it is its viability in service. A brilliant dessert that cannot be executed consistently throughout an entire shift is not a good restaurant dessert.

This dish is built with that logic. Gelcrem Frío makes it possible to prepare the gel without thermal processes, streamlining production. Profiber Stab 5 ensures that the sorbet behaves the same on the first pass and the last. The pain de Gênes is prepared in advance and keeps perfectly. And the roasted pineapple can be prepared in batches and regenerated to order.
