Glucose Powder 33 DE is a dehydrated glucose syrup with a 94% solids content. Its low sweetness (POD 24%) and antifreeze capacity (PAC 56%) make it an essential ingredient to prevent sugar recrystallization in candies and gummies. It also provides elasticity and prolongs the freshness of baked goods such as pastries, ganaches, truffles and other confectionery products.
Incorporate directly into dry mix or dissolve in hot liquids according to the recipe. Substitute 75 g of glucose powder for each 100 g of liquid glucose in formulas. Use to control sugar crystallization and improve the texture of preparations.
It is ideal for candies, gummies, ganaches, truffles and pastries. It improves elasticity and softness in baked products and stabilizes textures in preparations such as confectionery and fondant.
