Dark Muscovado Sugar is obtained from cane juice through a natural, unrefined process, without the addition of chemicals or additives. It retains its natural molasses intact, which gives it its characteristic dark brown color, moist, sticky texture and fine, slightly caked crystals. Its flavor is deep and intense, with marked notes of dark caramel, hints of licorice and a slight bitterness that makes it a very expressive ingredient.
Especially appreciated in bakery and patisserie, it is ideal for preparing spiced biscuits, gingerbread and fruit cakes. It is also used in savoury recipes, such as sweet and sour sauces or marinades, where it adds complexity and richness.
