Autumn has its own calendar in the kitchen, and few ingredients mark it as emphatically as mushrooms. Their season is brief, conditioned by rain and temperature, and during those weeks they become one of the most coveted products in the European pantry. Saffron milk caps, porcini, trumpet mushrooms, chanterelles: each variety brings a distinct nuance within that same aromatic territory of forest, dampness, and earth.

In contemporary cuisine, mushrooms also hold a strategic place. Their natural glutamate content makes them one of the main sources of umami in the plant kingdom, which has made them essential in preparations seeking flavor depth without resorting to animal-derived ingredients.

This Mushroom Cream is one of the eight emulsions that make up Disfrutar’s Vegetable Dish, currently on the restaurant’s menu. A starter conceived as a color palette: eight vegetable creams arranged on the plate —blue spirulina, spinach, calçot, carrot escabeche, saffron, red cabbage, beetroot, and mushrooms— which the diner mixes and tastes as a single ensemble.

Eight colors, eight flavors, one single technique

The dish’s approach is as visual as it is technical. Each cream retains its natural color, its full flavor, and its vegetable identity, but all share the same construction logic: a concentrated flavor base, a fat phase, and an emulsifier that transforms them into stable, unctuous creams with identical textures.

This textural homogeneity is precisely what allows the dish to work. Eight preparations with different behaviors would ruin the experience of mixing them; eight emulsions built with the same technical criteria make the gesture coherent.

In the case of the Mushroom Cream, this formula translates into three ingredients: a mushroom reduction, sunflower oil, and Promayo.

The contribution of mushrooms to the ensemble

Within this chromatic palette, the mushroom cream plays a particular role. While beetroot, red cabbage, or spirulina provide the most evident visual impact, mushrooms contribute depth: that umami background that gives weight to the whole and balances the fresh vegetable notes of the other creams.

The reduction concentrates the flavor. By evaporating the water from the mushroom juices, aromatic and umami compounds are intensified to obtain a liquid of extraordinary potency, which then gives identity to the entire emulsion.

Sunflower oil provides the fat phase, with a neutral profile that does not compete with the mushroom and allows the aromatic prominence to fall entirely on the reduction.

And Promayo is what transforms these two elements into a stable, unctuous, and homogeneous cream.

Promayo: egg-free mayonnaise-style emulsions

Promayo is our plant-based emulsifying base, specifically developed for mayonnaise-style emulsions: sauces where a fat phase must be stably integrated into an aqueous phase, generating that characteristic creamy and enveloping texture of classic mayonnaise.

Its design responds to a specific approach. In a traditional mayonnaise, the egg yolk fulfills the emulsifying function, but it carries two limitations: it contributes its own flavor —which modulates and sometimes masks that of the main ingredient— and conditions the preparation due to sanitary and dietary concerns.

Promayo solves both. Being completely flavor-neutral, it allows the main ingredient to express itself without interference. In a dish of eight creams where each must be immediately recognizable, this neutrality is not a detail: it is a requirement. The only thing perceived in the mushroom cream is mushroom.

Technically, it also provides:

Emulsion stability. The cream does not curdle or separate, even when incorporating an aqueous phase as concentrated as a mushroom reduction.

Ease of execution. It does not require temperature control or a progressive incorporation of oil with the precision demanded by traditional mayonnaise. The process is direct and the result reproducible —a decisive factor when eight different creams must be prepared to the same standard.

Application versatility. The emulsion maintains its texture both cold and at room temperature, facilitating its use at different stages of service.

An edible palette

What is interesting about this Vegetable Dish is how it transforms emulsion into language. There is no main sauce or garnish: there are eight creams with the same weight, the same behavior, and the same purpose of being mixed.

And in that palette, mushrooms bring autumn: the deepest, earthiest, and most umami note of the entire ensemble.
