What is a travel cake? The travel cake is a classic French pastry category that responds to a specific need: a cake that travels well, lasts longer and requires no cold chain. Unlike a fresh cake, the travel cake keeps for longer and can be stored at room temperature without losing quality. It is designed to withstand transport without any risk of spoiling, is easy to eat in any context and, by its very nature, contains no fresh fruit or cream. A format that combines practicality and pleasure, and has been one of the pillars of shop pastry for generations.

A book, a philosophy: Travel Cakes 2.0

This recipe is part of the book Travel Cakes 2.0 by our partner Adamance, a collection that reinterprets this classic format from a contemporary perspective: more intense flavors, controlled-origin fruit purées and technical solutions that allow working with fruit purées without compromising the structure or shelf life of the cake.

The intention: a fruity marbled cake like never before

The marble cake is a shop classic. The vanilla-chocolate version is a year-round staple, that cake that is always there and always sells. But Clément Higgins, the author of this recipe, had long been searching for a fruit version — with a genuinely pronounced flavor that respected the aromatic profile of the fruit — and could not find the right technical solution.

Because working with fruit in a marble cake is not straightforward. The moisture from purées alters the balance of the batter. The fruity flavor tends to get lost during baking. And achieving a marbling that holds its shape and color within the batter — without melting or disappearing — requires a gel that can withstand the heat of the oven.

“A marbled cake as I dreamed of, with authentic fruit flavor. It can be made with just one fruit to accentuate the intensity of flavor or, conversely, combine two fruits, one for the batter and another for the marbling. In any case, you get beautiful colorful marbling once sliced, an interesting play of textures, and a beautiful intensity” – Clément Higgins.

The technical solution: Gellan Gum and Konjac

The starting point was Adamance’s gellan interior recipe, slightly modified with the addition of Konjac to adjust the texture and behavior of the gel during baking. The combination of both gelling agents generates a stable, firm gel that is suitable for baking: it does not melt, does not migrate within the batter and maintains its shape and color even at oven temperatures.

Gellan Gum: high heat-resistant gelling agent that provides structure and firmness to the raspberry gel. Its ability to remain stable when hot makes it the key ingredient that makes marbling possible in a baked cake.

Konjac: plant-based fiber that complements the gellan’s texture, adding elasticity and improving the mouthfeel of the gel once baked. Together, they generate a texture that is neither too rigid nor too soft: the perfect balance to create those fruit veins that reveal themselves when the cake is sliced.

This raspberry gel is incorporated into the cake batter to create the marble effect: a technique that consists of adding the gel in swirls within the fruit batter before baking, generating that visual pattern of colored veins that makes marble cake so recognizable and appealing.

The result: color, texture, and real fruit intensity

Adamance’s Raspberry Marble Cake is a travel cake that compromises on nothing. It retains all the practicality of the format — it lasts, requires no refrigeration, travels well — while adding what for a long time seemed incompatible with it: authentic fruit flavor, natural color and a play of textures that surprises at every slice.

When cut open, the raspberry gel veins contrast with the fruit batter in a gradient of reds and pinks that turns every slice into an image. This is not decoration: it is the result of a well-executed technical solution, where Gellan Gum and Konjac make possible what was previously out of reach.
