  • Vanilla and Fleur de Sel Soft Caramel

    1. Heat the cream, glucose, lecithin, and infuse the vanilla.
    2. Make a dry caramel with the sugar.
    3. Extinguish this caramel several times with the salted butter.
    4. Add the hot mixture, cream and glucose, then the hydrated gelatin and cook the resulting mixture again to 105 ºC.
    5. Pour and reserve in the refrigerator.
    6. Use with a piping bag with nozzle.
