We use Adamance’s raspberry purée, known for its clean profile, balanced acidity, and exceptional aromatic intensity. This 100% fruit purée, with no added sugar, brings out the true character of the raspberry in each spoonful.

Thanks to our technical ingredient Prosoufflé, we can directly whip the puree without the need for egg white, obtaining an airy, stable, and much lighter texture. This soufflé not only maintains an impeccable shape for longer, but also enhances the pure flavor of the fruit, something difficult to achieve with traditional techniques.
