Roscón Dough

Knead all the ingredients together and let stand as a block for 30 minutes, adjusting the texture with milk if necessary.

Rest again overnight.

The next day weigh and form the pieces. Ferment for 2-3 hours at 30 °C and 85 % RH.

White Chocolate Mounted Ganache

Heat the cream and pour over the white chocolate, the scraping of the two vanilla pods and the gelatine mass.

Blend. Add the rest of the cream, let stand overnight and whip the next day.

Assembly: Lemon and White Chocolate Confit Cake

Cut the cake in two and fill with the whipped ganache. Decorate with the candied lemon.
