Less sugar

There are desserts that one hardly dares to touch. The Paris-Brest is one of them: praline, hazelnut and choux pastry, a formula so perfect that any intervention seems like a betrayal. And yet, it is precisely its iconic character that makes it the ideal candidate for a technical reinterpretation.

This Paris-Brest 2.0 is the creation of Jean Sivieude, technician at Sosa Ingredients, and was developed exclusively for DPAS 517 magazine as one of three recipes created by him. Its starting point was not innovation for innovation’s sake, but something much more personal:

“It is my favourite dessert. I wanted to preserve its three essential markers, namely praline, hazelnut and choux pastry, while making it lighter. Less sugar, more digestible, yet just as indulgent. A light mousseline cream, a delicate praline made with trehalose, and a crisp choux pastry.” – Jean Sivieude.

The technical heart of this reinterpretation lies in the mousseline cream. In its classic version, mousseline is a pastry cream enriched with a considerable amount of butter: smooth, indulgent and utterly delicious, but also rather rich, especially in a dessert that already incorporates praline and choux pastry.

This is where Gelcrem Hot comes into play, our clean-label functional native starch. By providing structure and body to the cream through its thickening properties, it allows for a significant reduction in the proportion of butter without the mousseline losing either its characteristic richness or its piping performance.

The technical benefits are immediate: a cream that is lighter on the palate, easier to digest, and less cloying, allowing the praline and hazelnut flavours to express themselves more clearly. Unlike other thickening agents, Gelcrem Hot imparts no flavour of its own and does not create pasty textures, enabling the mousseline to retain the clean, silky mouthfeel that defines a high-quality pastry cream.

Delicate Praline with Trehalose

The second pillar of this lighter interpretation lies in the praline. The incorporation of Trehalose, a sugar with a low sweetening power, makes it possible to reduce the perception of sweetness without affecting the structure or technical balance of the preparation. The praline retains the full intensity of its hazelnut flavour, but with a less sugary profile that allows the character of the nut to shine through more clearly.

Crisp Choux Pastry


Completing the dessert is a choux pastry carefully crafted to retain its crispness, providing the textural contrast to the creaminess of the mousseline that is, to a large extent, what defines the experience of eating a Paris-Brest.

Lightening is not about taking away

The result is a Paris-Brest that remains instantly recognisable through all its defining markers, with no doubt as to the dessert being enjoyed, yet presents a contemporary interpretation: less sugar, less fat and improved digestibility. Equally indulgent, but designed for today’s palate and for the end of a meal that should satisfy without feeling heavy.


Because lightening a classic is not about taking things away. It is about understanding what truly makes it what it is, and finding the technique that allows those defining characteristics to be maintained with less.
