Passion Fruit Cake

Ingredients

    • 240g -

      Passion fruit puree

    • 160g -

      Sugar

    • 80g -

      Sunflower oil

    • 10g -

      Baking Powder Std

    • 120g -

      Soft flour

    • 20g -

      Corn starch

    • qs -

      Icing sugar

Prepared by

    1. Mix the puree with the Potatowhip using a hand mixer. Whip the mixture in the stand mixer on speed 3.
    2. Mix the sugars and add them in three times like a French meringue. Pour the oil little by little into the meringue and mix well.
    3. Separately, mix the rest of the solids and add to the meringue with wrapping motions until fully integrated.
    4. Spread in the shape of a soletilla on a baking sheet with baking paper and bake at 180 °C (350 °F) for 6 minutes.
