Gummy jellies are a very popular candy with an elastic texture and quite easy to make, although they are usually made in starch boxes, they can be molded in silicone. The texture of the product is based on the use of gelatin that gives it the structure and the chewy effect, but at the same time, being thermo-reversible at a temperature lower than body temperature, allows them to melt when bitten, releasing their flavor.

Ingredients

    • 35g -

      Gelatin sheets 180Bloom

    • 140g -

      Cold water

    • 33g -

      Water

    • 133g -

      Sugar

    • 4g -

      Citric acid solution 50/50

    • qs -

      Essential oil

    • qs -

      Orange dye

    • qs -

      Yellow dye

    • qs -

      Sugar

Prepared by

    1. Hydrate the gelatin in the cold water.
    2. Put the water and sugar in a saucepan. Bring to a boil.
    3. Heat gently until the sugar dissolves.
    4. Add the glucose and bring the syrup to 120ºC.
    5. Remove from the heat and wait for the temperature to drop to 100ºC.
    6. Add the previously hydrated gelatin.
    7. Add the essential oil and food coloring. Add the citric acid solution.
    8. Place in a dosing funnel previously heated in the oven at 80ºC.
    9. Fill silicone molds in the shape of a hemisphere.
    10. Let stand for at least 20 hours at room temperature.
    11. Unmold and coat with a little sugar or cornstarch.
