In this recipe, we present our Yellow Peach Cold Foam, made with Proespuma Frío, a texturizer specifically designed to create stable and homogeneous foams without the need for heat.
The yellow peach, with its sweet and slightly floral aroma, is an ideal fruit for this type of preparation. Its velvety, juicy flesh transforms into a smooth, shimmering foam that clings perfectly to the plate, offering a light yet flavorful experience.
To make this, simply combine the peach puree with Proespuma Frío, mix until you obtain a smooth texture, and charge the siphon with two cartridges. This step is essential to ensure a proper emulsion and a light, stable final result with fine bubbles. After a short chilling time, the foam is ready to serve.
