For the stabilization of the ice cream, we have used Prosorbet 100 Frío Natur, which is a mixture of stabilizers, thickeners, fibers, and sugars. The Prosorbet 100 Frío Natur, helps us to stabilize easily and directly, contributing 10% solids to the recipe.
