Unlike other pectins, Pectin Fruit NH is heat-reversible, which means that it can be melted again and reapplied without losing its properties. This characteristic makes it the ideal choice for poured glazes, which must maintain a balance between fluidity and firmness.
The functioning of pectin depends on several key factors, including the presence of sugar, the solids content, and the pH.
