Pannacotta Inspiration Almond

The almond propannacotta is a reinterpretation of the classic Italian panna cotta, designed to surprise in restaurants with a silky texture and a sophisticated flavor profile. This version stands out for its lightness and its ability to adapt to current trends, such as the reduction of dairy products and the commitment to high-quality ingredients.

We use the texturizer Pro-panacotta Iota, an ingredient that allows us to obtain a perfectly creamy and stable texture, without the need for animal gelatin. Pro-panacotta Iota guarantees a smooth, melting structure that is easy to unmold, ideal for elegant and modern presentations.

The other protagonist is the Inspiration Almond chocolate from Valrhona, which provides an intense and authentic almond flavor, with toasted notes and a unique creaminess. This combination allows the propannacotta to have a gourmet level, perfect for closing a meal with a light but memorable dessert.

    1. Heat the almond milk to 40/45 ºC and add the sugar previously mixed with the Pro Pannacotta, then heat everything to less than 85 ºC.
    2. Emulsify over the coating, adding the liquid in several stages.
    3. Whisk to emulsify completely, being careful not to incorporate air.
    4. Pour at a temperature of 40 °C and store in the refrigerator, protecting the surface with plastic wrap.
