Hot Chocolate Foam

Ingredients

    • 400g - Milk
    • 100g - Liquid cream 35%.
    • 150g - Chocolate Coverage 65%.
    • 25g - Proespuma Hot

Prepared by

    1. Heat the milk and cream to 70 ºC.
    2. Mix the Proespuma Caliente and grind with a blender.
    3. Melt the chocolate couverture and mix little by little with a spatula until you obtain a smooth cream.
    4. Load the siphon with 2 loads and let stand for 10 minutes in a water bath at 65ºC.
