Practical tips for for perfect glaze with Proglaçage

For best results, heat the glaze to 80 °C before each use and apply it on pieces previously frozen at -18 °C, which ensures immediate setting and a professional finish. The recipe is not intended for spray glazes.

As for its preservation, we recommend keeping it in the refrigerator for 3 to 5 days maximum or, if it is not going to be used, freezing it for up to two months without losing brightness or functionality. In addition, in fruit glaze recipes, the addition of citric acid or an acid solution (50% citric acid and 50% water, or lemon juice) helps to maintain a bright color and prevent oxidation.

Poured Blackcurrant Glaze

This recipe formulated with Proglaçace is for direct poured glazes. Ideal if you only need one flavour glaze. This glaze can be stored and reused. We recommend storing the product in the refrigerator for a maximum of 3 to 5 days. If not to be used immediately, it can be frozen for up to two months. Be sure to heat the glaze to 80ºC before each use.

  • Poured blackcurrant glaze

    1. Mix Proglaçage with sugar, glucose, fruit purée, water and citric acid. Heat to 100 °C.
    2. Allow to cool to a temperature between 35 °C and 40 °C.
    3. Glaze.
