Using a foam siphon, Martin has created airy and light pistachio rocks that will delight your senses.

Ingredients

    • 240g -

      Egg whites

    • 50g -

      Sugar

    • 35g -

      Flour

    • qs -

      Green and yellow dye

Prepared by

    1. Mix all the ingredients with a hand blender. Strain well.
    2. Place in a 1/2 liter siphon. Add the gas charge. Shake well.
    3. Half fill a disposable cup with the foam.
    4. Microwave at 900 watts for 40 seconds.
    5. Let cool upside down. Unmold and break into pieces.
    6. Place in the dehydrator at 50ºC for 6 hours or until dry and crispy.
