Mixture of two salts that allow us to incorporate calcium to a medium without adding flavor, it helps us to provide enough calcium to a liquid to react with the alginate and can be spherified.

When a liquid does not have sufficient calcium content, Gluconolactate helps to balance it so that it can be spherified by the reverse technique.
Reverse spherification: When preparing a sodium alginate bath, the liquid to which Gluconolactate has been added will form gelatinous spheres when in contact with this gelling agent, creating a unique and controlled texture without affecting the original flavor of the liquid.
