Free Air Bag is a mixture of rice starch and kuzu. When mixed with any liquid and passed through a drying and frying process it becomes crispy.
Mix cold with the desired liquid and bring to a boil under constant stirring until a homogeneous texture is obtained. Spread the mixture between 1 and 3 mm or shape as desired. Dry for 12 hours at 50 °C and, once completely dehydrated, deep-fry at 220 °C for approximately 5 seconds until a crispy and airy result is achieved. Avoid fatty or high-sugar liquids.
Ideal for creating chips, crisps, decorative bases, and light snacks. Its mixture of rice starch and kuzu allows for fine and airy textures with a crispy burst when fried.
