Peta Crispy Neutro is carbonated sugar (popping candy) in 2 to 4.5 mm granules, uncoated and neutral in flavor. It bursts in the mouth as it releases its CO2 bubbles, providing pure effervescence without altering the flavor of the preparation.
Incorporate directly as an inclusion or decoration in low-moisture sweet preparations. Mix into chocolates, fat-based fillings, or dry doughs to add effervescence without adding flavor. Add cold and just before serving to maximize the popping effect.
Peta Crispy Neutro is carbonated sugar—popping candy, also known as crackling candy—in the form of 2 to 4.5 mm granules, uncoated and neutral in flavor. Each granule contains pressurized carbon dioxide that is released upon contact with saliva, generating the sparkling and audible pop that defines ‘peta’. Since it has no chocolate coating or added aroma, it is the most versatile base in the range: it provides pure effervescent texture without altering the color or flavor of the preparation, making it a neutral canvas for the workshop. Conversely, it is highly hygroscopic and lacks a moisture barrier, so it must be handled and stored dry.
