Peta crispy

Peta Crispies are effervescent sugar cores that contain pressurised CO₂ and release a distinctive crackling and fizzing sensation upon contact with the moisture in the mouth.

Unlike a conventional crispy, their appeal lies not only in their crunchiness, but also in the element of surprise: an effervescence that crackles on the palate and prolongs the flavour experience.

As the sugar is hygroscopic, the Peta easily absorbs moisture; therefore, in the coated varieties, a blend containing cocoa butter acts as a hydrophobic barrier that preserves the firmness of the granule and its effervescent properties for longer, offering moderate resistance to moist environments.
