Features

Fine grain for homogeneous finishes

The Strawberry Crispies 1-3 mm are small pieces of granulated freeze-dried strawberry, pink-red in color and with a fine grain, providing a light crunch and the authentic, intense flavor of strawberry. Their small size is their advantage: they sprinkle evenly, integrate into batters and coatings without unbalancing the mixture, and provide uniform color and flavor.

Made by freeze-drying and without coating, they preserve the maximum flavor expression and natural color of the fruit, with no added aromas. Being highly hygroscopic, they perform best in dry or fatty applications and should be added to moist mediums just before serving.

Frequently Asked Questions

For what uses is the fine strawberry grain suitable?
The 1-3 mm size is ideal for sprinkling, tinting coatings, and flavoring batters uniformly, without large pieces altering the texture. For a visible and appealing topping, the 2-10 mm version is more suitable.
Can I incorporate it into creams, mousses, or moist fillings?
This is not its ideal application. As it has no protective coating, the crispy is very hygroscopic and will soften and lose its crunch in direct contact with moist mediums. For such cases, add it as a decoration just before serving or reserve it for dry and fatty applications.
How do I maintain its crunchy texture once the package is opened?
Store in a dry place (humidity <60%) at a stable temperature (15-25 °C), with the package tightly sealed. As it is a very hygroscopic product, a desiccant bag helps preserve the crunch in optimal condition for about 15 days after opening.
