Does the nibs lose their crunch if mixed into water-based creams?
Like any nut, peanuts are hygroscopic. With prolonged contact with moisture (mousses or whipped creams), they will tend to soften. To prevent this, we recommend waterproofing the nibs by mixing them with a little melted cocoa butter, or using them in fat-based applications such as chocolates or pralinés.
How can I prevent the peanut flavour from turning rancid once the bag is opened?
The main enemy is oxidation of its fats. Although it keeps for 3 months at room temperature, it is vital to store it in an airtight container, away from direct light and sources of excessive heat in the kitchen.
