Lime Crispies are a granulated and crunchy version of freeze-dried lime, 2 to 10 mm in size and with the opaque yellow color characteristic of lime. They provide a natural crunch and an intense, refreshing citrus flavor, without the need for prior rehydration.

How to Use

Sprinkle directly onto dry and semi-solid desserts, or integrate into doughs and coatings before baking. Combine with coconut and white chocolate to reinforce the citrus freshness. Add to creams and ice creams at the time of service, without the need to rehydrate, and store in a dry place between uses.

Features

Crunchy citrus freshness

Lime Crispies are a granulated and crunchy version of freeze-dried lime, 2 to 10 mm and greenish in color, providing a natural crunch and an intense, refreshing citrus flavor. Their fresh acidity is ideal for lifting sweet preparations and for bringing the spirit of cocktails—mojito, margarita—to pastry in a dry format.

As they are made by freeze-drying and without coating, they preserve the maximum expression of flavor and do not require prior rehydration, which facilitates their use. Being very hygroscopic, they perform best in dry or fat-based applications and should be added to moist media just before serving to preserve the crunch.

Frequently Asked Questions

What does lime pair with in pastry?
Lime combines wonderfully with coconut, basil, white chocolate, and red berries. Its acidity brings freshness to sweet preparations and allows cocktail profiles, such as the mojito, to be brought to desserts and decorations.
Can I incorporate it into creams, mousses, or moist fillings?
This is not its ideal application. As it has no protective coating, the crispy is very hygroscopic and will soften and lose its crunch in direct contact with moist mediums. For such cases, add it as a decoration just before serving or reserve it for dry and fatty applications.
How do I maintain its crunchy texture once the package is opened?
Store in a dry place (humidity 60%) at a stable temperature (15-25 °C), with the package tightly sealed. As it is a very hygroscopic product, a desiccant bag helps preserve the crunch in optimal condition for about 15 days after opening.
