Freeze-dried tomatoes are dried through a controlled freezing process that better preserves colour, flavour and nutrients, while dehydrated tomatoes lose more water and tend to have a harder texture.
Can freeze-dried cherry tomato halves be rehydrated?
Technically yes, they can be rehydrated, although it is not recommended. Freeze-drying removes all water to concentrate flavour and reduce weight, which involves an added cost. Rehydrating them can alter their texture and flavour, as well as increase the cost of the dish by partially reversing the process that makes the product valuable.
Do tomatoes lose their nutritional properties when freeze-dried?
No. Freeze-drying is one of the most effective methods for preserving vitamins, antioxidants and the natural flavor of fresh tomatoes.
How should freeze-dried tomatoes be stored once the package is opened?
Once the package is opened (secondary shelf life), it is recommended to keep the freeze-dried cherry tomato halves at room temperature (15–25 °C). As it is a highly hygroscopic product, we recommend storing it with a silica gel packet to absorb moisture. This way, the product can be kept in optimal condition for up to 15 days after opening.
