The recommended dosage varies according to the desired processing:
Sponge cake: 24 g/kg + 2 g/kg acid
Croissant: 10 g/kg
Meringue: 10 g/kg
Macaron: 12 g/kg
Royal icing: 16 g/kg
Gelatin: 16 g/kg
Coverage: 40 g/kg
Cocoa butter: 60 g/kg
Ice cream: 5 g/kg + 5 g/kg acid.
Pastry cream: 15 g/kg + 5 g/kg acid.
Paste: 30 g/kg + 5 g/kg acid.
It is important to maintain the ideal pH between 3 to 4.5 to obtain an optimum result in the desired shade. Additionally, do not exceed a dose of ascorbic acid or derivatives of 0.1% to avoid destabilization of the anthocyanins.
