The Black Forest Crunch

Cherry Crispies are granulated freeze-dried cherry pieces, 2 to 10 mm in size and deep red in color, providing a natural crunch and the sweet, intense flavor of cherry. They immediately evoke the classic Black Forest combination—cherry and chocolate—a pairing that these crispies resolve with texture and character.

Because they are made by freeze-drying and without coating, they retain the maximum expression of flavor and the fruit’s natural color. Their wide particle size range makes them visible as both a topping and an inclusion. Being highly hygroscopic, they perform best in dry or fatty applications and should be added to moist mediums just before serving to preserve their crunch.

Frequently Asked Questions

Can I incorporate it into creams, mousses, or moist fillings?
This is not its ideal application. As it has no protective coating, the crispy is very hygroscopic and will soften and lose its crunch in direct contact with moist mediums. For such cases, add it as a decoration just before serving or reserve it for dry and fatty applications.
How do I maintain its crunchy texture once the package is opened?
Store in a dry place (humidity <60%) at a stable temperature (15-25 °C), with the package tightly sealed. As it is a very hygroscopic product, a desiccant bag helps preserve the crunch in optimal condition for about 15 days after opening.
Why do cherries pair so well with chocolate?
Cherries provide acidity and a fruity sweetness that contrasts with the bitterness of cocoa, a balance popularized by the Black Forest cake. These crispies transfer that classic pairing to the realm of texture, adding crunch to chocolate.
