Passion Fruit Crispies are granulated freeze-dried pieces, 2 to 10 mm, golden yellow in colour. They add a natural crunch and an intense, tangy tropical flavour, ideal for giving dry preparations an exotic touch.

How to Use

Incorporate into milk chocolate and coatings to offset sweetness with its tropical acidity. Sprinkle over tartlets, mousses and chocolates for an exotic finish. Add to creams and ice creams at the moment of service and keep dry between uses.

Glucose syrup, passion fruit juice concentrate (30%), apricot pulp, thickener: modified starch (E1414), thickener: sodium alginate (E401).
Store in a dry place (humidity <60%). Temperature between 15–25°C. Protect from light and odours. Once opened (secondary shelf life): once opened, keep at room temperature (15–25°C). Hygroscopic product; we recommend a desiccant sachet, as it is highly hygroscopic, and with this desiccant sachet the product can last 15 days.

As they are highly hygroscopic, they perform best in dry or fatty applications, and it’s best to add them to moist bases just before service to preserve the crunch.
