Gelatin of pork animal origin. Approximately 400 sheets/kg. 1 leaf = 2g. 180 BLOOM
Hydration: Soak the required amount of gelatine leaves in cold water for 5-7 minutes. Be sure to add the leaves one by one to ensure adequate hydration.
Drain: Once hydrated, remove the leaves from the water and drain well to remove excess liquid.
Dissolving: Add the drained gelatine leaves to the liquid to be gelled. Heat the mixture to more than 40ºC so that the gelatine dissolves completely.
Gelification: Allow the preparation to cool at a temperature of 4-5ºC for approximately 4 hours to obtain the desired gelled texture.
Note: If it is preferred to hydrate the gelatine directly in the liquid to be gelled, perform a previous hydration of 5-7 minutes in cold (or at room temperature) before heating it to ensure its complete dissolution.
