The color and elegance of cassis

Blackcurrant Crispies —cassis— are pieces of granulated freeze-dried fruit, 2 to 10 mm in size and dark violet in color, providing a natural crunch and the intense, tart, and aromatic flavor of this berry. Their personality is unmistakable: cassis, the base of the famous liqueur and kir, offers depth, elegance, and a spectacular purple color difficult to achieve naturally.

Because they are produced by freeze-drying and without coating, they retain the maximum expression of flavor and the natural color of the fruit, with 38.5% blackcurrant. Being highly hygroscopic, they perform best in dry or fatty applications and should be added to moist mediums just before serving.

Frequently Asked Questions

What is cassis and what does blackcurrant taste like?
Cassis is blackcurrant, a berry with an intense, tart, and very aromatic flavor, the base of the eponymous liqueur and the Kir cocktail. It provides depth and a natural violet color that is difficult to achieve, ideal for elegant preparations.
How do I maintain its crunchy texture once the package is opened?
Store in a dry place (humidity <60%) at a stable temperature (15-25 °C), with the package tightly sealed. As it is a very hygroscopic product, a desiccant bag helps preserve the crunch in optimal condition for about 15 days after opening.
Can I incorporate it into creams, mousses, or moist fillings?
This is not its ideal application. As it has no protective coating, the crispy is very hygroscopic and will soften and lose its crunch in direct contact with moist mediums. For such cases, add it as a decoration just before serving or reserve it for dry and fatty applications.
