Sal Viva by Ángel León is sodium acetate, a salt obtained from the precipitation of acetic acid from vinegar. This innovative product is known for its ability to cause an exothermic reaction through recrystallization when previously dissolved in an aqueous liquid. This unique property allows food to be cooked slowly or instantaneously, offering new culinary possibilities.
Mode of use
Heat and prepare the solution: Heat water or flavored liquid to boiling point. Add the Living Salt to the hot water and mix until completely dissolved. Boil the solution until it reaches a temperature of 117ºC. Cool the mixture: Pour the solution slowly into a tempered glass or stainless steel container. Make sure that the container is clean and free of impurities or edges, since they could activate the recrystallization in a spontaneous way. Allow the mixture to cool to a temperature below 20°C, ideally 5°C, without moving it or introducing elements into it. This is crucial to avoid early activation of crystallization. Protect during processing: During processing and handling, always use approved hand and face protection. The exothermic reaction can generate splashes or hot steam. Application on food: Once the mixture is completely cool, pour slowly over the product to be tempered. Upon contact with the food, the mixture activates, crystallizing instantly and generating an exothermic reaction that raises the temperature up to 60ºC (may vary slightly depending on saturation, container, or food size). The temperature gradually decreases, allowing you to extend the cooking time if necessary for small or delicate pieces.

Thanks to this formula, Living Salt can dissolve in water in much higher concentrations than conventional salt, creating a supersaturated solution capable of reacting instantly when poured on food.
