Tara Gum is a natural polysaccharide obtained from the seeds of the Caesalpinia spinosa tree, which belongs to the legume family. It acts as a thickener and stabilizer, being ideal to provide body and stability to any type of liquid.
Mode of use
Mix the Tara Gum with the rest of the solids in the recipe and add it to the liquid while stirring vigorously until complete dispersion. Heat up to 75-80 °C to ensure its correct dissolution and activation, obtaining a uniform texture without lumps. We recommend not to pour the liquid over the powder.
Dosage
1-8 g/kg
thickener: tara gum (E417).
It is mainly used in the preparation of sauces, where it provides a thick and homogeneous texture, avoiding phase separation problems (syneresis). It is also applicable to other liquids requiring stabilization and texture improvement.
