Gelling agents

Gelling agents are a group of texturisers that make it possible to produce jellies (gels in the strict sense of the word). They are products that, due to their structure, have the capacity to absorb water, generating a three-dimensional network that converts the liquid into a solid or semi-solid.

The basic differences between gelling agents are:

  • Origin: animal or plant-based.
  • Texture: soft, hard, creamy, crumbly, brittle, elastic, etc.
  • Temperature: activation, gelling and melting point temperatures.
