Mannitol is a 100% glucose-derived sweetener, known for its low caloric content. It is characterized by liquefying at 180 °C and caramelizing rapidly, forming an opaque, extremely hard caramel with low moisture retention. With a PAC of 188% and a POD of 60%, it is ideal for confectionery applications requiring solid and resistant structures.
Mode of use
