On the 19th of June 2025, an exclusive culinary event unfolded at the Yue跃 Modern Cantonese restaurant, bringing together 20 VIP culinary clients for a Modern Culinary Workshop. The event was led by the esteemed Chef Leafy NG, Asia Ambassador of Sosa Ingredients, who showcased his expertise in using innovative culinary techniques and products.
The workshop focused on the teaching and sharing of culinary bases and texturants, providing participants with a rich learning experience. Chef Leafy NG demonstrated the versatility of Sosa Ingredients through the creation of four exquisite desserts, each highlighting the unique textures and flavours achievable with these products.
The tasting began with Koji gelato: paired with honey bird nest and blood orange cream, followed by a refreshing White peach ginger foam with amaretto foam and almond crumble. The third dessert featured Coconut brulee with koji jelly and bergamot gel, while the final offering was a Salted Lime: pâte de fruits with yuzu whipped ganache and Opalys Yuzu Popping Eskimo Glaze.
Chef Leafy’s creations were inspired by local influences, emphasizing the potential of Sosa products to address clients’ culinary needs and challenges.
