ORANGE AU SAFFRON GLAZE

1000 g Water
5 gotas Sosa Saffron Aroma
400 g Sugar
40 g Sosa Fruit Pectin NH
40 g Lemon juice
200 g Orange juice
c/s Sosa Natural Orange Colouring

Heat the water up to 40ºC.
Aside, mix the sugar with the Fruit Pectin NH.
Sprinkle the solids into the water stirring with a whisk until dissolving.
Bring to the boil and let boil for 5 minutes.
Remove from heat and add the orange juice.
Add the lemon juice and stir.
Cover the mixture with a plastic film making contact and let cool in the fridge for 24 hours.
Once set and passed the 24h, melt in the microwave. 1 minute is enough.
Take out the air with a disc blender at low speed. It is important not to stir with a whisker or spoon, in order not to introduce bubbles.
Glaze the desired elaboration between 35ºC and 40ºC.
