Kefta Brochettes

Ingredients

200 g beef
30 g cream
8 g Culinary Journey Beef Fond
20 g Culinary Journey Onion Sofrito
Salt
Pepper
1 g freeze-dried rosemary

Preparation

Cut the beef into 2 cm cubes and mix all the ingredients in a blender for 30 seconds at medium speed. Mix until a uniform and fine consistency is achieved.
Form cylinders measuring 10 cm in length and 2 cm wide and skewer on wooden brochettes.
Cook on a barbecue, basting the brochette sporadically with a little of the Beef Fond diluted in water to glaze the meat.
Serve on charcoal grill with freeze dried rosemary to smoke the keftas.
