Rustic Paté with Mango Chutney

Ingredients

250 g pork liver
50 g chicken liver
125 g lean beef
125 g pork loin
500 g white pork fat
8 g Sosa Lyophilized Herbs Salad
20 g salt
5 g pepper
1 g Sosa Meat Umami
25 g pasteurized egg
1 dash of brandy
100 g Culinary Journey Mango Chutney

Preparation

Mince the meats on a meat grinder (or with a knife to make it more homemade). Season.
Add the Meat Umami, the Lyophilized Herbs Salad, the pasteurized egg, the brandy and the Mango Chutney. Mix well.
Put in glass jars and close.
Cook at 120ºC in a bain-marie for 40 minutes and let cool.
Serve with toasted bread and salt crystals.
