Turkey with Mole Poblano


50 g Culinary Journey Mole Poblano
Culinary Journey Chicken Fond
1 turkey thigh
Olive oil
Sesame seeds
Raw Peanuts
Fresh coriander
Cooked rice


Cut the turkey thigh in 3.
Heat 2 tablespoons of olive oil in a saucepan. Add the turkey, seal well and add the Mole Poblano, the Chicken Fond and the water.
Cover and cook for 30 minutes over a low heat until the meat is tender. Add a little more liquid if necessary.
When the turkey is cooked, set over the cooked rice and cover with hot Mole Poblano sauce.
Sprinkle the sesame seeds and the peanuts previously toasted (on an ungreased skillet, stirring occasionally, until they are slightly golden) and fresh cilantro on top.
