Chickpeas and Spinach Stew

Ingredients

q/s olive oil
5 tsp Culinary Journey Onion Sofrito
1 carrot
1 average sized potato
1/2 pot of chickpeas
2 tsp Culinary Journey Mughlai Curry Paste
q/s water
100 g small spinach leaves
q/s salt

Preparation

In a saucepan add the Onion Sofrito and the olive oil and lightly fry for 1 minute.
Add the potato and the carrot peeled and cut into mirepoix and lightly fry the vegetables for 4-5 minutes stirring often.
Add the chickpeas and the Mughlai Curry Paste. Cover with water and cook for 10 minutes.
Eventually add the spinach and cook the mix for 5 minutes over a low heat.
Adjust the seasoning if necessary and serve.
