Rack of Lamb with Mint Sauce


3 whole lamb chops
q/s Mint Sauce Culinary Journey
2 cloves of garlic
Gratin potato


Heat in a skillet over a medium heat until hot. Add 1 tablespoon of olive oil and the crushed cloves of garlic unpeeled.
Season the chops and add them to the pan with the fatter side down. Cook until well golden.
Protect the chops with tinfoil so they do not get burnt on the oven and then turn them over.
Move the ribs to a tray and bake for 8 minutes (or longer if preferred).
Remove from the oven and let settle 5 minutes.
Serve the rack with gratin potatoes and finish with the Mint Sauce.
