Toasted sesame seeds


Place the chicken skins on greaseproof paper, removing any excess grease and meat.
Separately, dilute a tablespoonful of Chicken Fond in a little water in a bowl.
Baste the chicken skins with this mixture and cover with another sheet of greaseproof paper and a tray as weight to prevent wrinkling when they are cooking.
Cook in the oven for 1 hour at 95 ║C.
Once cold, baste with a little honey and sprinkle with the toasted sesame seeds.
