Tomato Sorbet

Ingredients

1000 g water
200 g Culinary Journey Tomato Concentrate
50 g sugar
50 g Sosa Maltodextrin
150 g Sosa Prosorbet
45 g Sosa Glycerine
3 g Sosa Neutral Acid
Salt
'Coca' bread

Preparation

Mix the water with the Tomato Concentrate, sugar, the Maltodextrin, the Prosorbet, the Glycerine and the Neutral Acid. Mix in a blender and set aside in the fridge for 6 hours.
Pour the mixture into the ice cream machine and churn for 15 minutes. Remove and set aside in the freezer.
Serve on toasted 'coca' bread with a drop of olive oil and salt crystals.
