Glazed Squid with Onion


2 fresh squids
30 g Culinary Journey Onion Fond
50 ml water


Clean the squids and slice them open.
Score the exterior in a diamond pattern with a sharp knife and cut into 3 x 10 cm slices.
Place them on a metal tray and lightly roast with a blowtorch on the marked part.
Dilute the Onion Fond in water, pour it in to a hot frying pan and reduce until a sauce texture is achieved.
At this point add the squid and lightly cook until its curls and the sauce has a glazed texture.
Arrange on a plate, glaze with the sauce and sprinkle with chopped chives.
