Duck Gizzards in Vinaigrette

Ingredients

6 confit duck gizzards
20 ml balsamic vinegar
80 ml extra virgin olive oil
15 g Culinary Journey Duck Fond
Chives
Shoots and flowers salad mix

Preparation

Prepare a vinaigrette with the oil, vinegar, the Duck Fond and a handful of chopped chives. Whip with a whisk.
Cut the gizzards into quarters and submerge in the vinaigrette. Marinade in the fridge for at least 24 hours.
Arrange the shoots and flowers salad in the centre of the plate, place the room temperature marinated duck gizzards around it and dress with the vinaigrette.
