Shrimp Tortilla

Ingredients

40 g butter
45 g flour
35 g egg white
0.5 g espelette pepper
0.4 g salt
20 g Culinary Journey Seafood Fond
Dried prawns

Preparation

Melt the butter and mix with the flour, salt, egg white, Espelette pepper and the Seafood Fond until a uniform fine consistency is achieved. Leave to chill for 20 minutes in the refrigerator.
Roll out the dough on a baking tray with a spatula and cut out with a 10 cm diameter round biscuit mould.
Place the dried prawns on the dough in the desired shape.
Toast in the oven at 140 ║C for 13 minutes.
